Garlic Shrimp with Sautéed Spinach

Ingredients
- 450 gms (1 lb) Shrimp
- 2 tbsps Olive oil
- 4 Garlic cloves
- 0.5 tsp Red pepper flakes
- 2 tbsps Lemon juice
- 1920 mls (8 cups) Fresh spinach
- 1 tsp Salt
- 0.5 tsp Black pepper
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
- Add the shrimp to the skillet, seasoning with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the fresh spinach in batches, cooking until wilted. Season with a pinch of salt and pepper if desired.
- Return the cooked shrimp to the skillet, add lemon juice, and toss to combine.
- Remove from heat and serve immediately.
