  • 450 gms (1 lb) Shrimp
  • 2 tbsps Olive oil
  • 4 Garlic cloves
  • 0.5 tsp Red pepper flakes
  • 2 tbsps Lemon juice
  • 1920 mls (8 cups) Fresh spinach
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, seasoning with salt and black pepper. Cook for 2-3 minutes on each side until pink and opaque.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of olive oil.
  6. Add the fresh spinach in batches, cooking until wilted. Season with a pinch of salt and pepper if desired.
  7. Return the cooked shrimp to the skillet, add lemon juice, and toss to combine.
  8. Remove from heat and serve immediately.
