Ingredients
- 2 steak (ribeye or sirloin)
- 960 mls (4 cups) zucchini noodles
- 3 tbsps unsalted butter
- 4 garlic, minced cloves
- 2 tbsps olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsps fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
- Season the steaks with salt and black pepper on both sides.
- In a large skillet over medium-high heat, add 2 tablespoons of olive oil.
- Add the steaks to the skillet and cook for 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness.
- Remove the steaks from the skillet and let them rest for a few minutes.
- In the same skillet, reduce the heat to medium and add the butter.
- Once the butter is melted, add the minced garlic and cook for about 30 seconds until fragrant.
- Add the zucchini noodles to the skillet, tossing them in the garlic butter. Cook for 2-3 minutes until they are just tender.
- Season the zucchini noodles with a pinch of salt and black pepper.
- Return the steaks to the skillet to warm them up, spooning some garlic butter over the top.
- Finish with a squeeze of lemon juice and garnish with chopped parsley before serving.
