Ingredients
- 450 gms (1 lb) white fish fillets
- 2 tbsps olive oil
- 1 tsp chili powder
- 1 tsp cumin powder
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 8 corn tortillas
- 2 ripe avocados, diced
- 2 tomatoes, diced
- 120 mls (0.5 cup) red onion, finely chopped
- 60 mls (0.25 cup) cilantro, chopped
- 2 tbsps lime juice
- 0.25 tsp salt for salsa
- 0.25 tsp black pepper for salsa
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the chili powder, cumin powder, garlic powder, 0.5 tsp salt, and 0.25 tsp black pepper.
- Brush the fish fillets with olive oil and then rub the spice mixture over the fish.
- Place the fish on the grill and cook for 3-4 minutes on each side, until the fish is opaque and flakes easily with a fork.
- While the fish is cooking, prepare the avocado salsa by combining the diced avocados, tomatoes, red onion, cilantro, lime juice, 0.25 tsp salt, and 0.25 tsp black pepper in a bowl. Mix gently.
- Warm the corn tortillas on the grill for about 20 seconds on each side.
- Flake the grilled fish into bite-sized pieces and distribute evenly among the warmed tortillas.
- Top each taco with a generous spoonful of avocado salsa.
