Ingredients

  • 500 gms (1.11 lbs) Fish (such as cod or halibut)
  • 400 mls (1.67 cups) Coconut milk
  • 1 Onion
  • 2 Tomato
  • 3 Garlic cloves
  • 1 Ginger, inch piece
  • 2 Green chili
  • 1 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tsp Salt
  • 2 tbsps Vegetable oil
  • 2 tbsps Fresh coriander leaves

Instructions

  1. Heat oil in a pan and sauté chopped onions, garlic, and ginger until golden brown.
  2. Add chopped tomatoes, green chilies, and spices. Cook until tomatoes are soft.
  3. Pour in coconut milk and bring to a simmer.
  4. Gently add fish pieces to the curry, cover and cook until the fish is tender.
  5. Garnish with fresh coriander leaves and serve hot with rice or naan.
