- 4 chicken breast
- 2 eggs
- 240 mls (1 cup) all-purpose flour
- 240 mls (1 cup) olive oil
- 1 lemon juice
- 4 garlic cloves
- 6 potatoes
- 240 mls (1 cup) butter
- 240 mls (1 cup) milk
Instructions
- Pound the chicken breasts to flatten.
- Dip chicken in beaten eggs and then coat with flour.
- Heat olive oil in a skillet and cook chicken until golden brown on both sides.
- Remove chicken from skillet and add lemon juice and garlic to the same skillet to make the sauce.
- For mashed potatoes, boil potatoes until tender, then mash with butter, garlic, and milk.
- Serve chicken with sauce drizzled on top and mashed potatoes on the side.
