Ingredients

  • 2 Chicken breast
  • 480 mls (2 cups) Enchilada sauce
  • 8 Tortillas
  • 240 mls (1 cup) Cheddar cheese
  • 1 Onion
  • 2 Garlic cloves
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook and shred the chicken.
  3. In a skillet, sauté the onions and garlic until soft.
  4. Add the shredded chicken, cumin, salt, and pepper to the skillet and cook for 5 minutes.
  5. Pour 1/2 cup of enchilada sauce into the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture, roll it up, and place it in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas.
  8. Sprinkle cheddar cheese on top.
  9. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
