Ingredients
- 2 Chicken breast
- 480 mls (2 cups) Enchilada sauce
- 8 Tortillas
- 240 mls (1 cup) Cheddar cheese
- 1 Onion
- 2 Garlic cloves
- 1 tsp Cumin
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Cook and shred the chicken.
- In a skillet, sauté the onions and garlic until soft.
- Add the shredded chicken, cumin, salt, and pepper to the skillet and cook for 5 minutes.
- Pour 1/2 cup of enchilada sauce into the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll it up, and place it in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Sprinkle cheddar cheese on top.
- Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
- Serve hot and enjoy!
