Ingredients
- 1 Cauliflower
- 500 gms (1.11 lbs) Chicken breast
- 240 mls (1 cup) Greek yogurt
- 2 tbsps Lemon juice
- 3 Garlic cloves
- 1 tbsp Ginger
- 2 tsps Paprika
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Turmeric
- 1 tsp Salt
- 2 tbsps Cooking oil
Instructions
- Prepare the cauliflower by grating it or processing it into rice-sized pieces.
- Marinate the chicken breast in a mixture of Greek yogurt, lemon juice, minced garlic, ginger, paprika, cumin, coriander, turmeric, and salt. Let it marinate for at least 1 hour or overnight in the refrigerator.
- Preheat the grill or grill pan over medium-high heat. Brush with cooking oil.
- Grill the marinated chicken breast for about 5-6 minutes per side, or until fully cooked and slightly charred. Let it rest for a few minutes before slicing.
- In a separate pan, heat some cooking oil over medium heat. Add the cauliflower rice and sauté for 5-6 minutes, or until tender. Season with salt and pepper to taste.
- Serve the spicy grilled chicken tikka slices on a bed of cauliflower rice. Garnish with fresh herbs and lemon wedges. Enjoy!
