  • 1 tsp Ground Coriander
  • 1 tsp Ground Cinnamon
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 50 gms (0.11 lb) Fresh Parsley
  • 30 gms (0.07 lb) Fresh Mint
  • 100 gms (0.22 lb) Bulgur Wheat
  • 2 Tomatoes
  • 1 Cucumber
  • 50 mls (0.21 cup) Lemon Juice
  • 3 tbsps Olive Oil
  • 400 gms (0.89 lb) Chickpeas
  • 2 tbsps Tahini
  • 1 tsp Paprika
  • 30 mls (0.13 cup) Ice Water

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Finely chop the onion and garlic. In a bowl, mix the ground beef, onion, garlic, cumin, coriander, cinnamon, salt, and black pepper until well combined.
  3. Shape the mixture into long sausage-like kaftas and place them on a baking tray. Bake for 20-25 minutes or until cooked through.
  4. To prepare the tabbouleh, rinse the bulgur wheat and soak it in boiling water until tender. Drain well.
  5. Finely chop the parsley, mint, tomatoes, and cucumber. In a large bowl, combine the soaked bulgur, parsley, mint, tomatoes, cucumber, lemon juice, and olive oil. Season with salt and pepper to taste.
  6. For the hummus, place the chickpeas, tahini, garlic, lemon juice, and ice water in a food processor. Blend until smooth and creamy. Season with salt and paprika.
  7. Serve the beef kafta with tabbouleh and hummus on the side.
