Balinese Tofu with Coconut Rice and Spicy Peanut Sauce

Ingredients
- 400 gms (0.89 lb) tofu
- 400 mls (1.67 cups) coconut milk
- 240 mls (1 cup) rice
- 240 mls (1 cup) water
- 240 mls (1 cup) peanut butter
- 2 tbsps soy sauce
- 2 tbsps lime juice
- 1 tbsp honey
- 2 garlic cloves
- 1 tsp ginger
- 1 red chili
- 2 tbsps vegetable oil
- 1 tsp salt
- 1 tsp sugar
Instructions
- Drain and press the tofu to remove excess moisture, then cut it into cubes.
- In a pan, heat 1 tbsp of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides.
- In a medium saucepan, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low and simmer covered for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- For the spicy peanut sauce, combine peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, finely chopped red chili, and 1 tbsp of vegetable oil in a small bowl. Mix until smooth.
- Serve the tofu over the coconut rice and drizzle with the spicy peanut sauce. Garnish with chopped peanuts or cilantro if desired.
Notes
- This dish is a wonderful blend of spicy, savory, and sweet flavors.
- For a vegan version, ensure the peanut sauce does not contain any fish sauce.
