Ingredients
- 1 Salmon fillet
- 1 Asparagus bunch
- 240 mls (1 cup) Breadcrumbs
- 3 tbsps Fresh herbs (such as parsley, dill, and thyme)
- 2 tbsps Olive oil
- 1 tsp Salt
- 1 tsp Black pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix breadcrumbs, chopped fresh herbs, olive oil, salt, and black pepper.
- Place the salmon fillet on the prepared baking sheet and season with salt and pepper.
- Spread the breadcrumb mixture evenly over the salmon fillet, pressing gently to adhere.
- Trim the woody ends of the asparagus and place them next to the salmon on the baking sheet.
- Drizzle olive oil over the asparagus and season with salt and pepper.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the breadcrumbs are golden brown.
